Instructions Melt the butter in a large pot then add the onions, garlic and cayenne pepper. Sweat on a low heat for 5 minutes. Add the potatoes and stir though. Add the stock and water then turn up the heat and bring to a boil. Turn down to a low simmer and cook for 25 minutes until the potatoes are soft when pierced with a knife. Stir in the cheese, salt and cream. Bring back to a simmer then remove from the heat. Blend in a food processor until smooth. To serve, reheat stirring continually in a heavy based pot to avoid catching.
