Spinach & Feta Lasagne

Ingredients

  • 500g bag frozen spinach, thawed
  • 200g feta
  • 3 sheets fresh lasagne sheet
  • 2 x 425g Merlot & Mushroom Sauté Sauce
  • mozzarella cheese for grating on top

Instructions

Preheat the oven to 180C°. Squeeze out any remaining water in the spinach and place in a medium-sized bowl. Crumble over the feta then mix to combine with your hands. Cut the lasagne sheets to fit the exact shape of a medium-sized baking dish.

Pour the first jar of Merlot & Mushroom Sauté Sauce into the baking dish and spread it around so it evenly coats the base of the dish. Place the first pasta sheet on top. Spread half the spinach mix evenly over the pasta. Top with the second pasta sheet followed by the remaining spinach mix. Place the final layer of pasta on top and pour over the remaining jar Merlot & Mushroom Sauté Sauce. Work the sauce out to the edges for an even layer of sauce. Top with grated mozzarella cheese. Bake for 30-35 minutes until the cheese browns nicely.
