Chicken Chawarma

Ingredients

  • 1 tablespoon cooking oil
  • 500g diced chicken
  • 425g Urban Appetite Courgette & Cardamom Sauté Sauce
  • juice of 1 lemon
  • 4 small pitas
  • hummus
  • half a telegraph cucumber, sliced thin
  • fresh mint leaves, stems removed
  • unsweetened yoghurt for drizzling

Instructions

Heat the cooking oil in a large, deep sauté pan. Brown chicken on all sides in 2 batches. Add all the chicken back into the pan and pour over the Urban Appetite Courgette & Cardamom Sauté Sauce. Cook on a slow simmer, stirring occasionally for 15 minutes or until the chicken is cooked through. Remove from the heat and stir in the lemon juice.

Place the pitas in the microwave and heat until they puff. Let them cool for a minute then slice in half. Fill the pitas evenly with the chicken mix. Top the pitas up with cucumber slices and mint leaves. Place pitas on a serving plate and top each with a spoon of hummus. Drizzle over a little yoghurt and serve.
