Smoked Chicken and Prawn Salad

Ingredients:

  • 1 litre water
  • 1 tablespoon white sugar
  • 2 tablespoons raspberry or red vinegar
  • 3 red plums
  • 12 prawn cutlets
  • 1 single smoked chicken breast
  • 1 small paw paw
  • 1/2 small peeled red onion
  • Picked mint leaves
  • Picked coriander leaves
  • 1 can coconut cream (don’t shake)
  • 1 lime cut into wedges

Place the water, sugar and vinegar in a medium sized pot and bring to a simmer.

Slice the plums in half through the side and twist out the stone. Simmer plums for 3 minutes in the liquid then remove plums from the water and peel off the skins. Add the skins back into the simmering water and reduce the liquid to a quarter cup. Strain through a fine mesh sieve and when cool slice the plums in half and add back into the plum vinegar.

Blanch the prawns in simmering water for around a minute until cooked then strain and cool in running cold water.

Skin and slice finely the smoked chicken, paw paw and red onions.

Place some of the herbs onto a serving platter and arrange the prawns, chicken, paw paw and red onions on top. Arrange the plums on top and drizzle the plum vinegar over the salad.

Using the thick coconut cream that sits near the top of the can, spoon the cream over the salad.

Top with more herbs and lime wedges then serve.

Serves 2.
