Banana Salsa

Recipe Created for Dole

Ingredients

  • 50g salt
  • 50g caster sugar
  • 600g salmon fillet, skin removed
  • 2 tablespoons canola oil
  • 2 tablespoons sweet chilli sauce
  • Juice of 1 lime
  • 1 small red chilli, chopped fine
  • chopped coriander leaves
  • 1 teaspoon minced red onion
  • ¼ Dole paw paw, skinned and deseeded
  • 1 Dole banana, peeled

Instructions

  1. Mix salt and sugar then sprinkle on both sides of salmon. Chill for 5 hours.
  2. Stir together the sweet chilli, juice, chilli, coriander and onion. Dice paw paw fine and slice banana into 1cm cubes. Add then stir ingredients together.
  3. Heat frying pan with oil. Wash salmon, and pat dry. Slice into 4. Sear salmon on both sides until lightly cooked.
  4. Serve salmon warm with salsa spooned over the top.
