Banana Griddle Scones

Recipe Created for Dole

Ingredients

  • 250g self raising flour
  • ½ teaspoon salt
  • 50g sugar
  • 1 mashed banana
  • 250g sour cream

Instructions

  1. Heat a large cast iron pan to a low heat.
  2. Sift dry ingredients into a mixing bowl. Add the sour cream and banana then work in with a fork.
  3. Mix until the ingredients comes together to form dough. Knead a couple of times. Divide into 2 then pat into a flat circles around half a centimetre thick. Cut each circle into 8 wedges.
  4. In 2 batches, place the dough into the hot dry pan. Turn after over after 2 minutes then cook a further 2 minutes. Serve hot with superfoods fruits and maple syrup.
